Delux Potato Salad


  • Dice 6 medium sized peeled potatoes
  • Rinse well and boil in water until soft, but not mushy
  • Drain potatoes and allow to cool
  • Hard boil 4 eggs and chop into ¼ inch cubes
  • Dice two celery stocks
  • Dice ½ cup of red onion
  • Dice ½ cup of carrot
  • Chop 12 chive stocks
  • ¼ cup of pimentos
  • ½ cup of olive oil mayonnaise
  • Salt and pepper to desired taste
  • 2 tablespoons of white sugar

Combine all ingredients, refrigerate and allow to mature for approximately 2 hours

OPTIONS

I have in the past included a quarter cup of Italian salad dressing, but in that case I cooked the potatoes so that they could be lightly mashed.  I have also occasionally used the above recipe and included a teaspoon of dry mustard powder.
