- Dice 6 medium sized peeled potatoes
- Rinse well and boil in water until soft, but not mushy
- Drain potatoes and allow to cool
- Hard boil 4 eggs and chop into ¼ inch cubes
- Dice two celery stocks
- Dice ½ cup of red onion
- Dice ½ cup of carrot
- Chop 12 chive stocks
- ¼ cup of pimentos
- ½ cup of olive oil mayonnaise
- Salt and pepper to desired taste
- 2 tablespoons of white sugar
Combine all ingredients, refrigerate and allow to mature for
approximately 2 hours
OPTIONS
I have in the past included a quarter cup of Italian salad
dressing, but in that case I cooked the potatoes so that they could be lightly
mashed. I have also occasionally used
the above recipe and included a teaspoon of dry mustard powder.
